Namaste pizza crust mix

Since the diagnosis of my Celiacs disease at the end of September 2012, I have had to keep myself away from pizza which has flour & gluten in it. Watching my family & friends eat pizza and not being able to consume it myself was just breaking my heart. I decided I was going to make my own pizza. While at the grocery store once again, we found this pizza crust mix and decided to try it out. Once we were at home and ready to make the pizza, my husband read the directions and did exactly what the mix required. He had to mix everything, put it on the pan and then cook it before we could add anything to it. Once it was done cooking, the crust was similar to a very large chip (hard and crispy) even though the oven was set right and we didn't over cook it.  The way it turned out had me thinking this pizza crust could be a giant frisbee. The crust alone even though it was seasoned, was very plain and unexciting in taste. After we took it out and it cooled for a little bit, I was able to add the sauce and toppings. Once the pizza was done and we could take it out, it was time for me to cut this pizza. When I went to cut it, it made horrible cracking noises similar to crunching up chips in a bag.  I am pretty positive that I will not be buying this pizza crust again, but that is just me.

Two Foodie's gluten free pizza dough

I won a giveaway over at Gluten Free Frenzy and received this in the mail along with a pizza peel & a pizza stone.

I bought some gluten free toppings from the grocery store and proceeded to make the dough.
The first thing I noticed that they recommend, is that you have a metal mixer and paddle to make this dough, all of which I didn't have.

I decided that since I didn't have it, I would try it with a regular hand mixer, THAT WASN'T THE GREATEST IDEA. The dough just stuck on the mixer tools and I had to use a wooden spoon to keep dropping it back into my plastic mixing bowl. I didn't have to mix it very long though because it mixed up pretty fast.

I then noticed that they use corn meal to put on the table or area in which you will be rolling the dough on and to place on the pizza stone. Unfortunately, I did not have corn meal either, so I just used regular ALL PURPOSE GLUTEN FREE flour. (Which didn't really work very well either)

I could roll the dough easily into a ball and it was also very easy to roll out.

I then made the mistake of just making the pizza on top of the flour on the counter and then realized that it would be really hard to get the pizza peel under it. BIG SURPRISE (Sarcasm) .....I was right, It was extremely hard to pick it up and I actually ended up rippling the dough a bit. WHOOPS!

With a little help from my father getting the peel under there and put on the stone, I was able to bake it.

I haven't made very many home made pizzas before, so this is not Two Foodies fault... LOL 

After it was done baking, I was left with a pizza that looked similar to a fire grilled pizza.

It really had a strong taste of dough even though it was thoroughly baked which was  pleasing to the pallet never the less.

The crust was nice and crunchy, similar to that of a gluten pizza crust.

If you are new to baking pizza's from scratch, I would avoid this until you have mastered it for a while.
However, if you have had plenty of practice, this is a great gluten free pizza dough to try. lol


Overall, I give this dough a 4 out of 5 rating

Annie's cream deluxe mac n' cheese

I wanted to try this mac n' cheese out just for the fun of it, but it turned out to be the most vile stuff, I had ever put in my mouth. This mac n' cheese doesn't require butter, salt or milk because it comes with it's own soft cheese packet. After I was done cooking the noodles, I put the cheese in, mixed it and then dished it up. The noodles had a more gritty texture and definitely had a strong taste of rice and the cheese tasted really, really bitter. I tried adding some chili powder and a little sour cream, to try and tame the taste down but it just made it worse, I could not get that taste out of my mouth.  I do not recommend this mac n' cheese to anyone, not even my enemy.  You'd be better off buying noodles separately and making your own cheese to add to it. 

I give this mac n cheese a 1 out of 5 score.

Progresso's creamy mushroom soup

Thanks to my Mom for providing this soup for me when I visited my Mom & Dad's place a few weeks ago. I wasn't sure how this soup would taste because I was just beginning to transition over to gluten free and had the mentality that everything gluten free was disgusting, but fortunately for me, I found Progresso Creamy Mushroom soup to be very tasty. Now if you are used to the original creamy mushroom, you will most likely notice the difference right away. The gluten free version of creamy mushroom is more on the tame side for taste, where as the original gluten creamy mushroom soup is more rich in taste. 

The first time I tried this soup, it was just creamy and delicious but I decided for my second try, I would add the soup to rice and chicken breasts cut up. The dish turned out fabulous but I had to do add some onions and a few more seasonings to get it to taste just right. 

This is a great soup for a base, but you might want to add a few more seasons when making a bigger dish. 

I give this soup a 3 out of 5 score.

Progresso's chicken and cheese enchilada soup

Unfortunately, a lot of  canned soups & chili's have gluten. Fortunately for us, Progresso makes a few Gluten Free soups that are pretty tasty. My ultimate favorite would have to be the Chicken, Cheese Enchilada flavor. This soup is so creamy and cheesy, and tastes similar to queso cheese dip that you can get in the stores. The chicken is always so tender and the red and green peppers just tie all the flavors together and make this soup a MUST GET. 

Speaking of this soup, I think I am going to go make some.

Costco's brand Kirkland turkey breast

For all of you who have a card at Coscto, Make sure and pick this delicious turkey breast up the next time you go shopping there. This turkey is oven browned,  fully cooked, 100% fat free, has no preservatives & the best part IT'S GLUTEN FREE. My husband and I purchased this a few times in the past but didn't continue to purchase it because it was a little bit on the spendy side and since we were buying sliced turkey from Costco already, we didn't feel the need to buy this, but since it is Gluten free, we decided to get it again.

You know how some turkeys are dry and almost tasteless, well, this turkey is full of moisture and so juicy, it makes you crave more and more. This turkey stays in the fridge without spoiling for a pretty long time and freezes well.

This turkey is delicious to eat plain, as a meat source in a meal or sliced up in a sandwich.

I give this turkey a 5 out of 5 star.

Applegate Naturals gluten free chicken nuggets

I was so excited to see this in the frozen section of my grocery store that I decided to purchase it.
I have been craving chicken nuggets ever since I found out that I couldn't eat gluten anymore and had to fix chicken nuggets several times for my kid's meals.

When you look at the chicken nuggets on this box, your first thought is, "Oh, they look so crispy and delicious", well, unfortunately they aren't 100% as amazing as the photo portrays.

Before I get into details about these chicken nuggets, I first want to mention that the bag inside is very small and they only give you like 16-18 chicken nuggets, if you plan on getting it for a family dinner and have 5 people in your family like I do, I would definitely buy 3 boxes or more.

After taking out the chicken nuggets, I was eager to take that first bite but that first bite wasn't the greatest. The crust and breading is very crispy and tastes similar to that of KFC's coating on their chicken but the inside was what surprised me. The chicken inside was pureed and had a rather disturbing texture. The nuggets itself were eatable but awkward because when you bite into these nuggets it's like a crispy pureed sensation in your mouth.  The taste and awkwardness of these chicken nuggets are 10 times worse when they start to get a little colder while sitting on your plate.

I am pretty positive that I will not be purchasing these nuggets again, but that is just me.

I give these nuggets a 2 out of 5 score.
(The two is only there because of it's fantastic breading)
